Casa Mesa cooks the Filipino-Spanish table of old Manila households: slow-roasted lechon, paella negra, callos and leche flan, served as a generous buffet or as a quiet, plated dinner. Recipes are kept close to the lola original; the presentation is polished for a ballroom. One team plans the menu with you, runs the tasting in our Makati kitchen and serves on the day, with waitstaff in crisp barong and a captain who keeps every course on time.
